Eggs with Spinach

This is a delicious and easy recipe for airfryer eggs with tomato, fresh spinach and feta cheese, perfect for a quick breakfast or lunch. Here is how to make it:

Ingredients:

  • 2 eggs
  • 1 tomato (cut into small cubes)
  • A handful of fresh spinach (about 30g)
  • 30g feta cheese (crumbled)
  • 1 clove garlic (optional, finely chopped)
  • Salt and pepper to taste
  • Dried oregano, basil or herbs of Provence (optional)
  • A dash of olive oil (for greasing)

Preparation method:

  1. Prepare:

    • Preheat your air fryer to 180°C.
    • Lightly grease an oven dish or small container that fits in your air fryer with olive oil or use baking paper.
  2. Vegetables and herbs:

    • Heat a small saucepan over medium heat and add a little oil if necessary.
    • Add the chopped tomato and spinach and fry briefly (2-3 minutes), until the spinach has shrunk and the tomato has softened a little. Add the minced garlic for extra flavour if desired.
    • Season the mixture with salt, pepper and any herbs of your choice.
  3. Preparing eggs:

    • Place the tomato-spinach mixture in the prepared container.
    • Make two small 'nests' in the mixture where you can crack the eggs. This will prevent the eggs from leaking.
  4. Frying eggs:

    • Carefully crack an egg into each of the 'nests' on the vegetable mixture.
    • Crumble the feta cheese over the eggs and vegetables.
  5. Airfryer:

    • Place the container in the airfryer and bake the eggs for about 8-10 minutes at 180°C, depending on how you like your eggs. For a runny yolk you can use 8 minutes, for a firmer yolk you can use 10 minutes.
  6. Finish:

    • Remove the container from the air fryer and add some extra herbs, such as fresh basil or parsley.
    • Serve immediately!

Variation tips:

  • You can adjust this recipe to taste by adding extra vegetables such as bell pepper, onion or mushrooms.
  • Also try different types of cheese, such as goat cheese or mozzarella, for another dimension of flavor.
  • For a little kick, you can sprinkle some chili flakes over the eggs.
