Here's an easy recipe for baked oatmeal banana bread that you can make in the air fryer:
Ingredients:
- 2 ripe bananas
- 2 eggs
- 150 g oatmeal
- 1 tsp baking powder
- 1 tsp cinnamon (optional)
- 1/2 tsp vanilla extract (optional)
- 50 g Greek yoghurt or plant-based yoghurt
- 1 tablespoon honey or maple syrup (optional, for extra sweetness)
- 1/4 tsp salt
- 50 g walnuts or pecans (optional, coarsely chopped)
- 1 tbsp chia seeds or linseed (optional)
Preparation:
- Preparation : Mash the bananas in a large bowl until completely pureed.
- Mix the dry ingredients : Add the oats, baking powder, cinnamon, salt and optionally chia seeds or flax seeds to the bowl with the bananas. Mix well.
- Combine the wet ingredients : Add the eggs, Greek yogurt, and vanilla extract to the banana mixture. Stir well until it is a thick, even mass.
- Add additional flavorings : If desired, add the honey or maple syrup for extra sweetness and blend again.
- Optional : Stir the chopped nuts into the mixture for some extra crunch.
- Airfryer : Grease a small baking pan that fits in your airfryer (for example a round or square silicone pan) and pour the batter into it. Place the baking pan in the airfryer.
