Baked oatmeal with banana bread

Here's an easy recipe for baked oatmeal banana bread that you can make in the air fryer:

Ingredients:

  • 2 ripe bananas
  • 2 eggs
  • 150 g oatmeal
  • 1 tsp baking powder
  • 1 tsp cinnamon (optional)
  • 1/2 tsp vanilla extract (optional)
  • 50 g Greek yoghurt or plant-based yoghurt
  • 1 tablespoon honey or maple syrup (optional, for extra sweetness)
  • 1/4 tsp salt
  • 50 g walnuts or pecans (optional, coarsely chopped)
  • 1 tbsp chia seeds or linseed (optional)

Preparation:

  1. Preparation : Mash the bananas in a large bowl until completely pureed.
  2. Mix the dry ingredients : Add the oats, baking powder, cinnamon, salt and optionally chia seeds or flax seeds to the bowl with the bananas. Mix well.
  3. Combine the wet ingredients : Add the eggs, Greek yogurt, and vanilla extract to the banana mixture. Stir well until it is a thick, even mass.
  4. Add additional flavorings : If desired, add the honey or maple syrup for extra sweetness and blend again.
  5. Optional : Stir the chopped nuts into the mixture for some extra crunch.
  6. Airfryer : Grease a small baking pan that fits in your airfryer (for example a round or square silicone pan) and pour the batter into it. Place the baking pan in the airfryer.
  7. Baking : Set the airfryer to 160°C and bake the banana bread for about 20-25 minutes. Check with a toothpick if the banana bread is done (the toothpick should come out clean).
  8. Let cool : Remove the banana bread from the airfryer and let it cool for a few minutes before removing it from the pan. Slice it and serve.

Tips:

  • You can vary the additions, such as dried fruit (such as raisins or cranberries), chocolate chips or spices of your choice.
  • If you don't have a baking pan that fits, you can also use baking paper to form a "cake" in the air fryer basket.
