Vegetarian Pasta with Halloumi

Pasta with Halloumi and Vegetables

Ingredients (for 2-3 persons):

  • 200 g pasta of your choice (e.g. penne, spaghetti, fusilli)
  • 200 g halloumi, diced
  • 1 zucchini, cut into half moons
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 150 g cherry tomatoes, halved
  • 2 cloves garlic, finely chopped
  • 1/2 red onion, chopped
  • 2 tablespoons olive oil (for the vegetables and halloumi)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 tablespoon red pesto and mayonnaise
  • Optional: fresh basil or parsley for garnish
  • Optional: Parmesan cheese or a plant-based substitute for extra flavor
  • Optional: Veggielcious herbs to taste for over the vegetables

Preparation method:

  1. Cook the pasta:

    • Bring a large pot of water and salt to the boil.
    • Cook pasta according to package directions until al dente. Drain and set aside, reserving a cup of pasta water for later if necessary.
  2. Prepare the vegetables and halloumi:

    • Heat 1 tablespoon olive oil in a large pan over medium heat.
    • Add the halloumi cubes and fry for 3-4 minutes on each side, until golden brown and crispy. Remove from the pan and set aside.
    • In the same pan, add the remaining olive oil and fry the red onion and garlic for 2 minutes until soft.
    • Add the zucchini and pepper and cook for a further 5-7 minutes, until the vegetables are soft and lightly caramelised.
    • Add the cherry tomatoes and cook for another 2-3 minutes until they start to shrink slightly.
  3. Make the sauce:

    • Add the balsamic vinegar, oregano, salt and pepper to the vegetables. Stir well.
    • Add the cooked pasta and mix well. If the sauce is too dry, you can add a little of the pasta water to moisten it.
  4. Combine everything:

    • Add the fried halloumi to the pasta and vegetables and stir gently, making sure the halloumi doesn't break up.
    • Add the red pesto and mayonnaise, this is an extra addition.
  5. Serve:

    • Divide the pasta over the plates and garnish with fresh herbs such as basil or parsley.
    • Add some extra pepper or Parmesan cheese to taste for extra flavor.

This pasta is delicious with a fresh salad or some toasted pine nuts for extra crunch. You can also adjust the vegetables to your liking, for example with spinach or eggplant!
