Recipe for Veggie Egg Rolls from the Airfryer
These crispy veggie egg rolls from the airfryer are a delicious, healthy snack or side dish. They are packed with veggies and are quick and easy to make! 🌱
Ingredients:
- 10 spring roll wrappers (found in most Asian supermarkets)
- 1 cup chopped white cabbage (finely chopped)
- 1/2 cup sliced carrots (julienne or grated)
- 1/2 cup sliced mushrooms (finely chopped)
- 1/4 cup chopped spring onion
- 1 clove garlic (finely chopped)
- 1/4 cup bean sprouts
- 2 tablespoons soy sauce (or tamari for gluten free)
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar (optional, for extra freshness)
- 1/2 teaspoon ginger powder (or fresh ginger, grated)
- Salt and pepper to taste
- Oil in a spray can or brush (for spraying the egg rolls)
Preparation method:

Making filling
- Heat a little sesame oil in a pan over medium heat.
- Add the garlic and ginger and fry for 1-2 minutes until fragrant.
- Add the chopped vegetables (cabbage, carrots, mushrooms, spring onion, bean sprouts) and fry for 5-7 minutes until soft but still slightly crunchy.
- Add soy sauce, rice vinegar (optional) and a little salt and pepper. Stir well and remove from heat.

Rolling egg rolls
- Place a spring roll wrapper on a clean surface, with one point facing you (like a diamond).
- Spoon a tablespoon of the vegetable mixture onto the bottom half of the spring roll wrapper.
- Fold the bottom point up over the filling, fold the sides in and roll the egg roll tightly.
- Repeat with the rest of the filling and spring roll wrappers.

Preheat the Airfryer
- Preheat your air fryer to 180°C (350°F) for about 3-5 minutes.

Baking in the air fryer
- Spray the egg rolls lightly with oil or use a brush to give them a thin layer of oil. This will give an extra crispy result.
- Place the egg rolls in the basket of the airfryer. Make sure they are not on top of each other, so that the air can circulate well.
- Bake them in the airfryer for 10-12 minutes, or until golden brown and crispy. Shake halfway through the baking time for even crispiness.

Serve
- Let the veggie egg rolls cool briefly before serving. They are delicious with a dipping sauce of soy sauce, sweet chili sauce or homemade peanut sauce!
Tips:
- You can vary the filling with other vegetables, such as bell pepper, spinach or kale, depending on what you like.
- For an extra dimension of flavor, you can add some hoisin sauce to the filling.
- Store the unbaked egg rolls in the refrigerator for later use or freeze them to bake in the air fryer later!
