Preparation: Breaded salmon cubes with miso and sesame
Ingredients:
- Salmon fillet (or thicker fillet): 400 g
- Garlic: 1 clove, finely chopped
- Ginger: 3 cm, grated
- Eggs: 2, beaten
- Miso paste (pale): 2 tbsp
- Sesame seeds (black and white): 3 tbsp
- Breadcrumbs: 80 g
- Flour: 50 g
- Chili powder: ½ tsp
- Wok oil or olive oil

Preparation:
- Cut the salmon into equal sized cubes (approximately 3 x 3 cm).
- In a small bowl, combine the miso paste, grated ginger, and garlic. Set aside.

Breading:
- Prepare three deep plates: one with flour, one with beaten eggs and one with a mixture of breadcrumbs, sesame seeds and chili powder.
- Roll each salmon cube first in the flour, then in the egg, and finally in the breadcrumbs/sesame seed mixture. Press lightly so that the breading adheres well.

Baking in the air fryer:
- Sprinkle the breaded salmon cubes lightly with wok oil or olive oil for an extra crispy result.
- Place half of the cubes in the basket of the airfryer, making sure they are not on top of each other. Bake for 8 minutes at 190°C until the outside is golden brown and crispy.
- Repeat this process with the second half of the cubes.

Serve:
- Serve the salmon cubes with steamed vegetables such as broccoli florets, cherry tomatoes or green asparagus.
- If desired, garnish with extra sesame seeds or a pinch of chili powder for a nice presentation.
Tip: This dish is not only delicious as a main course, but also ideal as a snack with a dip of soy sauce and a little lime juice.
