Halloumi Fries with Dukkah and Salty Lemon Mayo from the Airfryer
With these crispy halloumi fries, seasoned with dukkah and served with a fresh lemon mayo, you will impress at any dinner or party. Halloumi is a unique, slightly salty cheese from Cyprus and the Middle East, which bakes perfectly without melting. If you want the cheese to be less salty, soak it in water for a few hours and pat dry.

Ingredients
Lemon mayo
- 1 egg yolk
- 1/2 tbsp mustard
- 2 tbsp finely chopped preserved lemon peel
- 250 ml sunflower oil
- 1 tbsp herbal vinegar
- Salt and pepper to taste
Halloumi fries
- 100 g panko
- 40 g dukkah (plus extra for serving)
- 150 g flour
- 3 eggs
- 450 g halloumi, cut into strips of 2 cm wide
- Lemon wedges, to serve
Preparation method
1. Make the Lemon Mayo:
Place the egg yolk, mustard, preserved lemon peel, sunflower oil and herb vinegar in a tall measuring jug. Place the immersion blender in the bottom of the jug and slowly pull upwards to bind the mayonnaise. Move up and down a few times to thoroughly mix the mayo. Season with salt and pepper. Store in a jar; you'll have more than enough for extra dipping!
2. Paneer the Halloumi:
Mix the panko with the dukkah and a pinch of salt in a deep plate. Put the flour in a second plate and beat the eggs in a third. Dip the halloumi strips one by one in the flour, then in the egg and finally in the panko with dukkah, pressing the breading well. Place the breaded halloumi on a baking tray and leave to rest in the fridge for 15-20 minutes.
3. Airfryer Preparation:
Preheat the airfryer to 180°C. Lightly brush the halloumi fries with oil, or spray with an oil spray. Fry the halloumi fries in batches in the airfryer for about 8-10 minutes, until golden brown and crispy. Shake the basket in between to fry them evenly.
4. Serving:
Serve the halloumi fries immediately with the salty lemon mayo, extra dukkah and a few lemon wedges for a fresh twist.
