Chicken Fajita Wraps Recipe
These Chicken Fajita Wraps are a delicious and easy meal, perfect for a quick lunch or dinner. With spicy chicken, grilled veggies, and a tasty sauce, you can enjoy a Mexican-inspired meal in no time.
Ingredients:
For the chicken and herb mix:
- 500 g chicken fillet (cut into thin strips)
- 2 tablespoons olive oil
- 1 teaspoon cumin powder
- 1 teaspoon paprika powder
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder (optional, for extra spice)
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Juice of 1 lime
For the vegetables:
- 1 red bell pepper (cut into strips)
- 1 yellow bell pepper (cut into strips)
- 1 onion (sliced into thin rings)
- 1 tablespoon olive oil
For the sauce:
- 2 tablespoons sour cream or Greek yogurt
- 1 tablespoon mayonnaise (optional)
- 1 tablespoon salsa (or a little chili sauce to taste)
- 1 teaspoon lime juice
- Salt and pepper to taste
For the wraps:
- 4-6 tortilla wraps (large size)
Additional toppings (optional):
- Grated cheese (cheddar or mozzarella)
- Avocado in slices
- Fresh coriander
- Sriracha or other chili sauce
Preparation method:

Marinating the chicken:
- In a bowl, mix the chicken breast with the olive oil, cumin, paprika powder, garlic powder, onion powder, chili powder (if using), lime juice, salt and pepper.
- Place the chicken in the refrigerator to marinate for at least 15-30 minutes (or longer if you have time).

Roasting the vegetables:
- Heat a tablespoon of olive oil in a pan over medium heat.
- Add the peppers and onion and cook for 5-7 minutes, or until soft and lightly caramelized. Set the vegetables aside.

Cooking the chicken:
- Heat some oil in the same pan over medium heat.
- Fry the marinated chicken strips for 5-7 minutes, or until cooked through and golden brown.
- Add the fried vegetables to the chicken and mix well.

Making sauce:
- In a small bowl, combine the sour cream (or Greek yogurt), mayonnaise (if using), salsa, lime juice, salt and pepper.

Assembling wraps:
- Heat the tortilla wraps in a dry pan or in the microwave.
- Place one wrap on a plate and add a generous spoonful of the chicken and vegetable mixture.
- Top with some sauce, grated cheese (if desired) and possibly avocado and fresh coriander.

Serve:
- Fold the sides of the wrap inwards and roll the wrap up tightly.
- Serve immediately and enjoy your Chicken Fajita Wraps!
Tip: You can also grill the wraps briefly in a pan to make them extra crispy. For an extra dimension of flavour, add a little grated cheese to the inside of the wrap before rolling it up.
