Lamb Shoulder Stuffed with Dried Fruit | From the Airfryer

Stuffed lamb shoulder with dried fruit from the airfryer

Preparation of the ingredients:

  1. Preparing dried fruit:

    • Place the dried apricots and raisins in a bowl and pour hot tea over them. Let them soak for 15-20 minutes to soften.
  2. Cutting vegetables and nuts:

    • Peel and finely chop the onion. Coarsely chop the pistachios and walnuts with a sharp knife or a food processor.
    • Cut the garlic bulbs in half horizontally, so that the cloves are halved.
  3. Making the filling:

    • Drain the dried fruit well and pat dry with kitchen paper. Mix the fruit in a bowl with the chopped onion, chopped nuts, a pinch of salt and pepper. Set aside.

Preparation of the lamb shoulder:
4. Prepare the meat:

  • Lay the lamb shoulder flat on a work surface and season the inside with salt and pepper. Spread the stuffing evenly over the meat.
  • Roll up the lamb shoulder tightly and tie it with kitchen string, so that the stuffing stays in place. Rub the outside of the meat with soft butter for a golden brown crust.
  1. Preparing the airfryer:
    • Pour the veal or lamb stock into the basket or drawer of your airfryer. This will provide moisture and flavor during roasting. Place the lamb shoulder in the basket and add the halved garlic bulbs around the meat.

Roasting in the air fryer:
6. Setting up the Airfryer:

  • Set the air fryer to 180°C and bake the lamb shoulder for 45-50 minutes.
  • Carefully turn the meat every 20-30 minutes and baste it with the roasting juices from the basket. This prevents drying out and ensures a delicious flavour.
  1. Check core temperature:
    • Use a core thermometer to check the doneness of the meat. At a temperature of 63-68°C the meat is nicely pink. If the temperature is lower, bake it for a few more minutes.

Finishing and serving:
8. Rest time:

  • Remove the lamb shoulder from the airfryer and wrap it loosely in aluminum foil. Let the meat rest for 15 minutes so that the juices are well distributed.
  1. Serve:
    • Slice the lamb shoulder into nice slices and serve with baked potatoes and steamed broccolini. Use the roasting juices as gravy for extra flavour.

Tip:

This dish is ideal for a festive meal. Make sure you use an XXL model airfryer to have enough space for the meat and garlic.
