Airfryer Spring Rolls with Sweet and Sour Tomato Sauce
Enjoy crispy, tasty spring rolls packed with vegetables and perfectly seasoned with a homemade sweet and sour tomato sauce. Ideal as a main course or hearty snack, and a healthier choice thanks to the airfryer!
Ingredients (for 8 spring rolls):
For the spring rolls:
- 75 g rice noodles
- 100 g leek
- 1 red pepper
- 8 oyster mushrooms
- 50 g bean sprouts
- 100 g grated carrot
- 1 tbsp sesame oil
- Salt and pepper to taste
- 1 egg (beaten)
- 8 thawed spring roll wrappers
- Sunflower oil
For the sweet and sour tomato sauce:
- 3 tbsp tomato ketchup
- 1 tbsp white wine vinegar
- 180 ml water
- 1 dash of sunflower oil
- 1/2 tbsp sambal
- 3 tbsp sugar
- 1 tbsp potato starch
- 2 sprigs of coriander
Preparation method:
Meal spring rolls
1. Prepare the rice noodles:
Soak the rice noodles in a bowl of hot water for 5 minutes. Drain and let drain well.
2. Make the filling:
Cut the leek, pepper and oyster mushrooms into thin strips. Mix these together with the bean sprouts, carrot and rice noodles. Add the sesame oil and season with salt and pepper.
3. Fill the spring rolls:
Place a spring roll wrapper with the point facing down. Spoon a little filling slightly below the middle of the wrapper. Brush the edges of the spring roll wrapper with beaten egg. Fold the bottom point over the filling, then the sides inwards, and roll up tightly. Repeat for all the spring rolls.
4. Baking in the air fryer:
Preheat the airfryer to 180°C. Lightly brush the spring rolls with sunflower oil and bake them for 16 minutes until golden brown and crispy. Check regularly, as baking times may vary per airfryer.
Sweet and sour tomato sauce
1. Prepare the base:
Heat tomato ketchup, white wine vinegar, 100 ml water, sunflower oil, sambal and sugar in a saucepan. Bring to the boil.
2. Thicken the sauce:
Mix the potato starch with 80 ml of water to a smooth paste. Stir this into the boiling sauce and let it cook for another 2 minutes while stirring.
3. Finishing:
Serve the spring rolls warm with a bowl of sweet and sour tomato sauce and garnish with fresh coriander.
