  • Gluten free: No flour needed, so ideal for everyone.
  • Quick and easy: From batter to cookies in under 30 minutes (with some chill time).
  • No butter or oil: Less fat, but the same rich taste.
  • Kid-friendly: These cookies are a hit with young and old!
  • Golden crispiness: Perfectly baked in the airfryer, without the hassle of an oven.

Ingredients:

  • 200 grams of peanut butter (use a thick, creamy peanut butter such as Jif or Skippy; not natural peanut butter).
  • 50 grams of granulated sugar
  • 50 grams of light brown sugar (or replace with coconut blossom sugar).
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract

Supplies:

  • Airfryer
  • Baking paper
  • Mixing bowl
  • Spoons and measuring cups

Preparation method:

Step 1: Making the dough

Combine peanut butter, granulated sugar, brown sugar, egg, baking soda, and vanilla extract in a large mixing bowl. Stir until a firm cookie dough forms. Refrigerate dough for at least 30 minutes to firm up.

Step 2: Prepare the Airfryer

  • Preheat the air fryer to 160°C .
  • Line the bottom of the basket with baking paper.

Step 3: Forming cookies

  • Use a tablespoon or ice cream scoop to take portions of about 1.5 tablespoons of dough . Roll the dough into balls and place them in the airfryer basket with some space in between.
  • Lightly flatten the balls with a fork and make a cross pattern on top of each cookie.

Step 4: Baking

  • Bake the cookies in the air fryer for 8-10 minutes until they are lightly golden brown and puffy.
  • Let the cookies cool in the basket for 5-10 minutes , so they firm up. Then transfer them to a wire rack to cool completely.

Tips for perfect cookies:

  • Chill the dough: This prevents the cookies from spreading too much during baking.
  • Use creamy peanut butter: Avoid natural peanut butter; it will make the dough too soft.
  • Do not overlap: Bake in small batches so the cookies bake evenly.
  • Do not overbake: The cookies will remain soft in the center, but will firm up as they cool.

Serving suggestions:

  • Dip: Pair with a glass of milk or serve with a dip such as melted chocolate.
  • Storage: Store in an airtight container for up to 5 days (if they make it that long!).
  • Variations: Add chocolate chips or sprinkle with sea salt for extra flavor.

Make this fluffy, gluten-free treat in your airfryer and enjoy the ultimate comfort food! 🥜✨
