Ingredients (for 30 cookies):
- 1 cup unsalted butter (soft)
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 large eggs (at room temperature)
- 1 tsp vanilla extract
- 3 cups oatmeal (quick cooking version)
- 1 1/2 cups flour
- 1 package instant vanilla pudding mix (95 g)
- 1 tsp baking soda
- 1 tsp salt
- 2 cups chocolate chips
- 1 cup chopped nuts (optional)
Preparation method
1. Prepare the dough
- Preheat the air fryer to 165°C (325°F).
- In a large bowl, beat together the butter, granulated sugar and brown sugar until fluffy.
- In a separate bowl, beat the eggs with the vanilla extract and add this to the butter mixture.
- Then add the oats, flour, vanilla pudding mix, baking soda and salt and mix until smooth. Finally, stir in the chocolate chips and optionally the nuts.
2. Shape the cookies
- Lightly grease an air fryer-suitable baking tray with butter.
- Using a spoon, scoop small portions of dough (about a tablespoon) onto the sheet and flatten slightly. Leave about an inch of space between the cookies to allow for expansion.
3. Baking and serving
- Bake the cookies in the airfryer for 8-10 minutes at 165°C until golden brown.
- Carefully remove them from the airfryer and let them cool on a rack. Serve warm for the ultimate experience, for example with a scoop of ice cream!
