Treat yourself to these irresistible Airfryer Scotch Eggs! A crispy, golden brown crust envelops succulent sausage meat and a perfectly cooked egg. Ingredients (for 6 servings):
- 6 boiled eggs (soft or hard boiled)
- 450 g sausage meat
- 65 g flour
- 2 large raw eggs
- 180 g panko breadcrumbs
- 3 cloves of garlic (finely chopped)
- 1/2 onion (finely chopped)
- 2 tsp smoked paprika (optional)
- 2 tsp dried herb mix
- 1 tsp salt
- 1 tsp ground black pepper

Preparation method:

1. Mix and divide
- Combine garlic, onion, salt, pepper, herbs and sausage meat in a large bowl. Mix well and divide into 6 equal balls.

2. Prepare your air fryer and breading station
- Preheat the airfryer to 180°C. Prepare three bowls:
- Step 1: Beat the raw eggs.
- Step 2: Mix flour and smoked paprika.
- Step 3: Add panko breadcrumbs.

3. Shape the Scotch Eggs
- Flatten each sausage meatball and wrap it tightly around a boiled egg, making sure there are no gaps.

4. Bread the eggs
- Dip each egg in the flour, egg and panko mixture in turn. Repeat 2-3 times for an extra crispy layer.

5. Baking in the air fryer
- Place the Scotch Eggs on a lightly greased baking rack or baking paper in the airfryer. Bake for 15-18 minutes at 180°C, until golden brown and crispy.

6. Serve and enjoy
- Serve warm with a fresh salad or your favorite sauce. Let them cool for a perfect picnic snack!
